Description

Fat pholiota (Pholiota adiposa) is a valuable edible wood-decay fungus belonging to the Strophariaceae family. In the wild, this species is found primarily in forests across the Northern Hemisphere, where it colonizes stumps and fallen logs of deciduous trees, most commonly aspen, birch, or beech.

Botanically, the mushroom is characterized by a rounded, slimy cap of yellowish-brown color covered with scales and featuring firm flesh. The fruiting bodies often form characteristic clusters. In commercial cultivation, this species is valued for its rapid mycelial growth and ability to efficiently colonize lignocellulosic substrates.

Successful cultivation of Pholiota adiposa requires a specialized substrate consisting of hardwood sawdust, sunflower husks, or straw, enriched with nitrogenous additives. During the incubation period, the temperature must be maintained at 22–24°C, while triggering the fruiting process requires lowering the temperature to 15–18°C and ensuring high air humidity.

The primary economic value of this crop lies in the food industry. The fat pholiota is appreciated for its pleasant flavor and dense texture, making it a sought-after product for pickling, drying, and freezing. The fungus contains a complex of B-group vitamins and antioxidants, which contributes to the growing interest in its commercial-scale production.

Common cultivation challenges include the contamination of substrates by mold fungi (such as Trichoderma) and bacterial rot, which thrive when sterility or moisture levels are not properly managed. Pests, including fungus gnats and mites, can cause significant damage to the yield, making strict sanitary and hygienic standards essential in mushroom farming operations.
