Tuberous-rooted chervil (Chaerophyllum bulbosum L.) is a biennial herbaceous plant belonging to the Apiaceae family. In agriculture, it is cultivated for its starchy, sweet-tasting roots. It is a traditional yet underutilized vegetable crop that has gained interest in modern farming due to its dietary benefits and distinct culinary profile, resembling a cross between a potato and a parsnip.

The plant originates from Europe and Western Asia, where it grows in the wild in moist, shaded environments. In agricultural settings, it thrives in temperate climates. Its expansion into cultivation is limited by its specific lifecycle, which requires a dormancy period to develop full flavor, making it a niche crop for specialized growers and organic farms.

Botanically, the plant develops a rosette of leaves in its first year, channeling energy into the underground tuber. By mid-summer, the foliage withers, signaling that the roots have matured. The tuberous roots are conical, typically brownish on the outside with white, fine-textured flesh.
