White sapote

Casimiroa tetrameria

Description

White sapote (Casimiroa tetrameria) is a subtropical evergreen tree belonging to the Rutaceae family. Despite its common name, it is not closely related to the sapodilla; instead, it is a botanical relative of the citrus family. The tree is prized primarily for its large, round fruits, which feature a sweet, creamy pulp often compared to a custard or a blend of peach and vanilla.

The species is native to the highlands of Mexico and Central America, where it thrives at various altitudes. Due to its adaptability, it has been successfully introduced to other subtropical regions including California, the Mediterranean, and parts of Australia. It requires a climate that is relatively frost-free but also benefits from the distinct seasonal cooling found in subtropical environments.

Botanically, Casimiroa tetrameria grows into a large, dense-canopied tree. Its leaves are palmately compound, and the small, inconspicuous flowers develop into fruits that can vary in size and seed count depending on the cultivar. The fruit skin is thin and ranges from green to yellow when ripe, and it is usually consumed when soft and fully mature.

Cultivation success relies on providing well-draining, deep soil and ample sunlight. While the tree can tolerate periods of dry weather once established, it responds significantly to irrigation during the fruit-set phase. It is essential to avoid waterlogged conditions, as the root system is sensitive to poor drainage and fungal pathogens like Phytophthora.

Pest management for this crop often involves monitoring for fruit flies, scales, and mealybugs. Regular pruning is recommended not only to maintain a manageable height for harvesting but also to improve air circulation within the canopy, which helps reduce the incidence of leaf and twig diseases. Proper fertilization with micronutrients, particularly iron and zinc, is also key in alkaline soils.

  • Processing into milkshakes, smoothies, and ice creams.
  • Use in artisanal baking and jams.
  • Ornamental use in Mediterranean-style gardens.
