Description

Bourgati's sea holly (lat. Eryngium bourgatii) is a perennial herbaceous plant belonging to the Apiaceae family. Unlike many other members of this genus, this crop is valued for its compact growth habit, silvery-blue foliage, and highly decorative inflorescences that resemble prickly heads surrounded by rigid bracts.

The species originates from the mountainous regions of Southwestern Europe, primarily the Pyrenees, where it thrives on rocky slopes. In agricultural and horticultural practices, this species is well-adapted to temperate climates. The plant is exceptionally hardy, provided that the drainage system is well-organized to prevent root rot.

Botanically, the plant is a rhizomatous perennial reaching 40–50 cm in height. Its leaves feature characteristic jagged edges with sharp teeth and a distinct white marbled pattern on the surface. Flowering occurs in mid-summer, with spherical flower heads appearing at the tips of the stems, eventually turning a deep steely or violet-blue color upon maturity.

The cultivation of Eryngium bourgatii requires maximum solar exposure and the strict avoidance of water stagnation in the root zone. The plant thrives in poor, loose, well-drained calcareous soils. It does not tolerate heavy clay substrates that may lead to root decay. Maintenance is minimal, requiring irrigation only during extreme drought, and moderate fertilization, as excess nutrients can compromise cold hardiness.

In terms of agricultural and horticultural use, the crop serves as both a landscape feature and a valuable dried flower. It retains its structure and color long after harvesting and drying. Common pests include aphids and spider mites, which typically emerge during hot, dry summer periods. Diseases are virtually non-existent with proper soil drainage, although fungal infections of the foliage can occur during overly humid seasons.
