Unlike common onions, leeks do not develop a true bulb; instead, they produce a long, thick, and succulent cylinder of bundled leaf sheaths known as the shank, which is the edible part most prized in culinary applications.

Originating from the Mediterranean region and the Middle East, the leek has become a staple crop globally. Its range of cultivation spans across diverse temperate climates. Because it is biennial, it devotes its first year to vegetative growth, forming the characteristic leaves and shank, and its second year to flowering and seed production.

Botanically, the leek is robust and hardy. Its leaves are flat and arranged in a fan-like structure, often displaying a deep green color with a waxy coating.
