The Anatolian orchid (Orchis anatolica) is a herbaceous perennial plant belonging to the Orchidaceae family. It is a geophyte that relies on specialized underground tubers to survive Mediterranean climatic cycles, characterized by active growth during moist spring months and dormancy during the hot, dry summer season.

The species is primarily native to the Mediterranean basin, extending from Greece and Turkey to the Middle East and the Caucasus. It typically inhabits diverse environments, ranging from open pine woodlands to rocky limestone slopes and subalpine meadows, thriving in locations where soil drainage is excellent.

Botanically, the Anatolian orchid is distinguished by its twin tubers and a single, unbranched stem that can reach up to 40 cm in height. The plant features a rosette of basal leaves and a striking inflorescence consisting of rose-pink to purple flowers. Each flower possesses a prominent, upward-curving spur, a key feature that aids in the identification of the species within the Orchis genus.

Cultivation of Orchis anatolica is considered challenging for standard agriculture due to its absolute dependence on mycorrhizal fungi for seed germination and nutrient uptake. The soil must be alkaline or neutral, highly porous, and rich in mineral content. Providing the correct balance of moisture during the growing season while ensuring complete drought during dormancy is essential for survival.

The primary economic use of the Anatolian orchid is in the production of salep, a nutritious flour made from the ground dried tubers. Salep is highly valued for its glucomannan content, acting as a thickener in dairy-based desserts and traditional beverages. Due to the destructive nature of harvesting tubers from the wild, many regions have introduced strict regulations to preserve these natural populations.
