Ulluco

Ulluco (Ullucus tuberosus) is a herbaceous perennial plant belonging to the Basellaceae family. It is primarily grown for its edible tubers, which are a dietary staple in the Andean regions of South America. It is widely considered one of the most important indigenous crops of the Andes, alongside potato and oca.

Originating from the high-altitude areas of the Andes, spanning from Colombia to northern Argentina, ulluco has been cultivated for centuries. Its natural habitat is characterized by cool temperatures, high humidity, and altitudes between 2,500 and 4,000 meters. The plant has evolved to thrive in environments where many other common agricultural crops struggle to survive.

Botanically, ulluco is recognized by its succulent stems and heart-shaped leaves. The tubers themselves are the most distinctive feature, exhibiting a vibrant array of colors including yellow, pink, red, and purple. Internally, the flesh is firm, mucilaginous, and high in starch, sugars, and various vitamins, maintaining its structural integrity during cooking.
