Witloof, scientifically known as Cichorium intybus L., is a biennial vegetable crop belonging to the Asteraceae family. It is a specific variety of chicory that is primarily cultivated for its tight, white, and tender heads, which are produced through a specialized agricultural process known as forcing, performed in complete darkness to minimize bitterness.
The crop originated in Belgium during the 19th century and has since become a staple in European and North American horticulture. Its cultivation cycle is divided into two distinct phases: the field growth stage, where the plant develops a large taproot, and the indoor forcing stage, which yields the final edible product.
Botanically, the plant is characterized by a deep, fleshy taproot that functions as a storage organ for inulin and other carbohydrates. During the forcing stage, these reserves are utilized by the plant to produce a compact cluster of leaves. Because the plant is protected from light, the leaves remain pale, crisp, and significantly milder in taste compared to wild chicory.
The agronomic requirements for Witloof involve well-drained, fertile, deep soil to support proper root expansion. Climate-wise, the plant prefers temperate conditions. The forcing stage is highly controlled, typically conducted in cool, dark environments with strictly regulated humidity levels to ensure uniform growth and prevent desiccation of the delicate heads.
