Withania coagulans, commonly known as coagulant withania or vegetable rennet, is a perennial shrub belonging to the Solanaceae family. It is distinct from its relative, Withania somnifera (ashwagandha), primarily due to its unique biochemical properties that allow it to curdle milk.

The plant is native to the arid and semi-arid regions of South Asia, specifically spanning from Pakistan and Afghanistan to parts of Northern India. It is highly adapted to harsh, desert-like conditions where water is scarce and temperatures often reach extreme peaks, making it an excellent candidate for cultivation in drylands.

Botanically, the plant grows as a woody shrub reaching heights of up to 1.5 meters. It possesses leathery, pubescent leaves and small, yellowish, star-shaped flowers. The fruit is a berry enclosed in a persistent calyx, which is a hallmark of many plants within the nightshade family, providing protection during seed development.

Cultivation requires well-drained, sandy or gravelly soil with moderate fertility. The plant is extremely drought-tolerant once established but requires careful site selection to avoid waterlogging, which is detrimental to its roots. Propagation is typically achieved through seeds, and plants should be spaced sufficiently to allow for airflow and prevent fungal outbreaks.

The most significant economic application of Withania coagulans is in the dairy industry. The fruits and flowers contain specialized proteases that act as a plant-based rennet for cheese coagulation, making it vital for vegetarian cheese production. Medicinally, the plant is studied for its potent antioxidant, anti-inflammatory, and hepatoprotective properties attributed to its rich content of withanolides.
