Description
The horse mushroom (Agaricus arvensis) is a highly regarded edible fungus belonging to the Agaricaceae family. Known for its pleasant almond-like scent and excellent texture, it serves as a significant biological resource that can be effectively integrated into intensive cultivation systems by professional growers.
Originating in temperate regions of Europe and North America, this species is naturally adapted to grasslands, meadows, and pastures. As a saprotrophic organism, it decomposes organic matter in soil, which dictates the specific requirements for the substrate composition in artificial production environments.
Botanically, Agaricus arvensis is defined by its large, creamy-white pileus that often turns yellow when bruised or with age. The lamellae start as whitish-gray, eventually shifting to a dark chocolate brown. A distinctively broad, double-layered ring on the stipe serves as a diagnostic feature that separates it from other similar wild mushroom species.
Successful production requires a high-quality, pasteurized compost substrate rich in nutrients. Growers must maintain precise environmental controls: the mycelium colonization phase requires temperatures around 23°C, whereas the fruiting phase thrives at lower temperatures (15–17°C). Proper ventilation is critical to manage humidity levels and CO2 concentrations, ensuring healthy development of sporocarps.
Management of pests and pathogens is a vital component of the agrotechnical cycle. Common threats include mushroom phorid flies, sciarid flies, and parasitic fungi such as the green mold (Trichoderma spp.). Implementing strict hygiene protocols, such as steam sterilization of facilities and using high-quality casing soil, is essential for maximizing yield and maintaining crop safety.
