Canadian peach pitting is a physiological disorder that manifests during the ripening phase of the fruit. Unlike pathogenic diseases, this condition is driven by environmental stress and metabolic imbalances within the plant, resulting in localized tissue death and characteristic surface deformities.

The primary hosts of this disorder are various cultivars of the peach (Prunus persica). High-yielding varieties that produce large fruits are particularly susceptible, as they place high demands on the tree's nutrient transport system during rapid development stages.

Symptoms are identified by the appearance of sunken, pitted lesions on the skin of the fruit. Beneath these lesions, the flesh typically undergoes corky degeneration, becoming dry and hardened.
