Leuconostoc mesenteroides is a Gram-positive lactic acid bacterium that acts as a significant agent of plant tissue spoilage. While widely recognized for its beneficial role in food fermentation, it is also classified as a spoilage organism in agriculture, capable of inducing soft rot and slimy degradation in a variety of stored fruit and vegetable crops.
The pathogen primarily attacks succulent, sugar-rich plants. Key crops susceptible to this form of bacterial infection include cabbage, carrots, beets, and potatoes. Sugar beet processing and storage are particularly vulnerable to this bacterium, as the high concentration of sucrose within the taproot supports rapid microbial colonization and the synthesis of dextrans, which are responsible for the characteristic slimy appearance.
Symptoms of the infection manifest as the development of a thick, viscous, transparent slime on the surface of the plant tissue. As the bacteria metabolize the sugars, they break down the cellular structure, leading to severe softening and unpleasant odors. Infected produce undergoes rapid deterioration, rendering it unmarketable and unsuitable for processing within a very short timeframe.
The development of the disease is strictly dependent on environmental factors, specifically high relative humidity and temperatures ranging from 15°C to 25°C. Infection is typically initiated through physical wounds sustained during harvesting or transport. Once the primary barrier of the plant cuticle is breached, the bacteria spread rapidly, especially in environments where ventilation is inadequate and condensation allows the slime to persist.
Effective management and prevention strategies are crucial for minimizing post-harvest losses. These include maintaining cold chain logistics to keep storage temperatures as low as possible, implementing rigorous sanitation protocols for storage facilities, and utilizing gentle handling techniques to prevent bruising and skin breakage during harvest. Pre-storage sorting is vital to remove any infected or damaged units that could trigger a spread among the healthy stock.
