The pathogen Pediococcus cerevisiae is a type of lactic acid bacteria that can cause significant agricultural loss by inducing soft rot and tissue degradation. While widely recognized for its role in food fermentation, in the context of raw agricultural commodities, its growth is generally considered detrimental, leading to the rapid deterioration of harvested vegetables and fruits.
This bacteria primarily attacks carbohydrate-rich crops, including root vegetables, cabbage, and various types of silage. It is particularly dangerous for crops that have sustained physical injuries during harvesting, as the leakage of cellular fluids provides the necessary nutrients for the rapid colonization and proliferation of the bacteria.
The diagnostic symptoms of this condition include the softening of plant tissues, the development of a pungent sour odor, and the formation of a visible slimy film on the plant surface. As the bacteria metabolize plant sugars, they produce organic acids that disrupt the cell wall integrity, leading to a breakdown of the structure and the eventual liquefaction of the produce.
The development of Pediococcus cerevisiae is heavily influenced by environmental conditions, specifically temperatures between 20°C and 30°C and high levels of ambient humidity. Poor airflow in storage facilities significantly increases the risk of an outbreak, as moisture accumulation on the surface of stored goods facilitates the rapid spread of the pathogen from infected units to healthy ones.
Effective control measures focus on post-harvest hygiene and environmental management. Maintaining low, stable temperatures in storage units is crucial to inhibit bacterial activity. Furthermore, producers should implement strict sanitation protocols for all harvesting tools and storage containers to minimize the initial inoculum load, ensuring that only healthy, undamaged produce enters the supply chain.
