Natamycin
Description
Natamycin, also referred to as pimaricin, is a polyene macrolide antibiotic produced by Streptomyces natalensis bacteria. In agricultural science, it is classified as a potent biological fungicide, widely utilized for its ability to suppress the growth of various pathogenic fungi and yeast species.
The primary mechanism of action involves the binding of natamycin to ergosterol, a vital sterol present in fungal cell membranes. By binding to ergosterol, the fungicide alters membrane permeability and disrupts cellular transport, ultimately leading to the death of the fungal cell and inhibiting further mycelial development.
Natamycin is primarily used in the post-harvest management of agricultural produce. It is exceptionally effective in protecting fresh fruits, vegetables, and berries from spoilage caused by common molds, including Penicillium and Aspergillus species, thereby extending the shelf life and quality of the yield during storage.
An important feature of natamycin application is its excellent safety profile, as it is non-toxic to humans and animals when applied correctly. It is often formulated into edible coatings or aqueous solutions for dipping, providing a reliable protective barrier against spoilage pathogens on the surface of produce.
