The Florida oyster mushroom (Pleurotus florida) is a prized edible species belonging to the Pleurotaceae family. Known for its rapid colonization rates and high yield potential, it has become a staple in both home-based and commercial mushroom farming. It is physically distinguished by its creamy-white to light grey coloration and a robust, vigorous mycelium structure that excels in various environmental conditions.

Originally identified as a distinct strain within the Pleurotus complex, its natural habitat encompasses the hardwood forests of subtropical and temperate regions. In these ecosystems, it serves a vital role as a primary decomposer of organic wood matter. Its adaptability to diverse agricultural residues has facilitated its cultivation across many countries, where it thrives on materials like wheat straw, cottonseed hulls, and sawdust.

Botanically, Pleurotus florida produces large, fan-shaped fruiting bodies with a velvety texture. Its growth cycle is characterized by a strong vegetative phase where the white mycelium fully permeates the substrate. Following colonization, the introduction of fresh air and a drop in temperature triggers the formation of dense clusters of mushrooms, which can be harvested several times per substrate block.

Agricultural requirements for this variety are specific but manageable. The incubation period requires temperatures between 22°C and 25°C in a dark, humid environment. Once the substrate is fully colonized, the transition to the fruiting room is necessary, where temperatures should be lowered to 15-18°C. Proper ventilation is essential, as high CO2 levels can inhibit cap development and cause abnormally long, thin stems.

Management of diseases and pests is critical for maintaining commercial viability. Common issues include contamination by Trichoderma (green mold), which thrives on improperly pasteurized substrates, and infestations by fungus gnats or mites. Adopting strict sanitation protocols, ensuring proper heat treatment of the growth medium, and maintaining an optimal microclimate are the foundational steps for achieving a successful, disease-free harvest.
