Unlike many filamentous fungi, these yeast organisms specifically target tissues rich in carbohydrates, utilizing fermentation processes to break down plant cells. It is widely recognized in agricultural pathology as a cause of rapid spoilage in stored fresh produce.
The range of crops susceptible to Candida valida includes most fleshy fruits and vegetables. Apples, pears, grapes, stone fruits, and tomatoes are among the most frequently affected. Infection typically occurs at the post-harvest stage, specifically through skin abrasions, insect bite marks, or bruises caused during harvesting, where the yeast finds a nutrient-rich environment for colonization.
Symptoms of the disease are characterized by the appearance of a creamy or whitish film on the surface of the fruit. As the infection progresses, the underlying tissue softens and eventually collapses. A distinct sign of this infection is the emission of a fermented, sour, or yeast-like odor, which distinguishes it from typical bacterial soft rot. In storage facilities, poor airflow often leads to moisture condensation, which acts as a catalyst for Candida valida growth. While refrigeration effectively suppresses the metabolic activity of this fungus, it does not destroy it, meaning the pathogen can resume growth if the cold chain is interrupted.
