Issatchenkia occidentalis is a species of yeast that acts as a significant post-harvest pathogen. In agricultural settings, it is recognized for causing the rapid spoilage of various fruits and vegetables. This fungus is widely distributed and is particularly problematic in environments where harvested produce is stored for extended periods.

The fungus primarily affects high-sugar crops. Key commodities at risk include tomatoes, grapes, citrus fruits, and melons. Because Issatchenkia occidentalis thrives in environments rich in simple sugars, it is also a frequent contaminant in fruit processing facilities, potentially affecting juice and pulp quality.

Symptoms of an infection typically manifest as localized softening of the fruit tissue, the appearance of liquid-filled lesions, and a distinct fermentation odor. As the infection progresses, a creamy or whitish biofilm of yeast colonies may appear on the surface of the produce, leading to the total breakdown of cellular structure.

The development of Issatchenkia occidentalis is heavily dependent on moisture levels and temperatures between 20°C and 30°C. The pathogen generally requires an entry point to colonize the host, such as wounds, bruises, or cuts occurring during harvest, handling, or transit. Fruit flies and other insect vectors are primary agents for spreading the yeast spores to healthy produce.

To minimize losses, producers should focus on integrated post-harvest management. This includes cooling the produce immediately after harvest to inhibit microbial growth, ensuring proper sanitation of storage bins and transport equipment, and removing damaged fruits from batches to prevent "nesting" decay, where the infection spreads from one fruit to adjacent ones.
