Kloeckera apiculata (syn. Hanseniaspora uvarum) is a prominent species of apiculate yeast widely found on the surface of various fruits. In agriculture, it is recognized as a significant causative agent of spoilage, particularly in viticulture and orcharding, where it initiates undesirable fermentation processes that compromise crop quality.

This yeast primarily affects sugar-rich crops such as grapes, apples, pears, berries, and stone fruits. It colonizes the surface of the fruit, utilizing nutrients leaked from skin micro-fractures. The yeast is particularly prevalent in environments where fruit integrity has been breached by mechanical damage or insect feeding activity.

Symptoms of infestation include the rapid softening of fruit tissues, accompanied by a distinct fermented, vinegar-like, or alcohol-like odor. Affected fruits often exhibit surface disfigurement and a slimy texture. This condition is frequently exacerbated by the secondary infection of acetic acid bacteria, which complete the process of decomposition and spoil the harvest.

The development and spread of Kloeckera apiculata are favored by warm temperatures and high humidity levels. In the field, spores are disseminated by environmental factors like rain and wind, as well as by insect vectors, including fruit flies and wasps, which move between damaged fruits and spread the yeast cells across the plantation.

Integrated pest management remains the most effective protection strategy. This includes strictly controlling insect populations that damage fruit skin and employing proper canopy management to ensure adequate airflow and reduce humidity. Harvest should be conducted under dry conditions, followed by immediate storage at low temperatures to inhibit yeast metabolic activity and preserve fruit shelf-life.
