Torulopsis is a genus of yeast-like imperfect fungi that function as opportunistic pathogens, primarily causing secondary decay and fermentation in agricultural produce. These microorganisms belong to the group of asporogenous yeasts and are capable of rapid metabolism in the nutrient-rich tissues of damaged fruits and vegetables.

The fungus affects a wide range of host plants, most notably orchard fruits, grapes, tomatoes, and stored grains. Its presence is typically associated with post-harvest deterioration, where the pathogen colonizes host tissues and initiates enzymatic degradation, resulting in the breakdown of sugars and organic compounds.

Symptoms of infection are often identified by the presence of soft, watery spots on the surface of the fruit, accompanied by a white or creamy-colored fungal growth. A distinct, sharp, alcoholic, or acidic smell is the hallmark of Torulopsis activity, signifying the fermentation process occurring within the infected plant material.

Environmental conditions that favor the spread and development of this pathogen include high relative humidity (above 80%) and temperatures ranging from 20°C to 30°C. In storage facilities, the spores can easily disseminate via air circulation, contaminated crates, or insect vectors, leading to rapid contamination of healthy produce stored in close proximity.

Management strategies focus on sanitation and preventative post-harvest handling. Key practices include:

  • Maintaining proper ventilation in storage units to keep humidity low.
  • Rigorous cleaning and disinfection of sorting equipment and storage bins.
  • Minimizing physical injuries to produce during harvesting.
  • Prompt cooling of harvested crops to suppress fungal metabolic activity.
Effective control also involves integrated pest management to reduce insect-related damage that serves as entry points for the yeast.
