Critical moisture content

This is the maximum level of moisture at which grain can be stored safely without the risk of heating, spoilage, or microbial growth.

Также говорят: safe storage moisture, equilibrium moisture content, drying threshold

Critical moisture content is the threshold value beyond which grain respiration rates increase, leading to rapid deterioration, mold growth, and insect infestation. Understanding this limit is essential for farm managers to decide whether a batch requires mechanical drying before being placed into long-term storage.

In practice, this indicator dictates the operating parameters for drying and aeration systems. Keeping moisture at or below this level ensures the biological stability of the crop and prevents the loss of nutritional and commercial value. Failure to monitor this leads to the formation of 'hot spots' within storage bins, which can spoil large quantities of grain.

A common mistake is taking moisture readings only from surface layers without considering the moisture distribution within the entire mass. Since the critical limit varies based on ambient conditions and crop types, consistent laboratory testing is required to prevent economic losses.
