Description
Aspergillus penicillioides is a xerophilic mold fungus belonging to the Ascomycota division. It is a frequent contaminant of agricultural commodities, well-known for its ability to thrive in low-moisture environments, which makes it a major concern for stored cereal grains, oilseeds, and various dried agricultural products.
The fungus primarily targets harvested crops including wheat, rice, barley, and corn. It is particularly prevalent in silos and warehouses where environmental controls are suboptimal. Because it is highly adapted to low water activity environments, it can outcompete other microorganisms in dried grain stores.
Symptoms of infestation include the appearance of localized mold colonies that range in color from white to yellow and brown. Infected kernels often show signs of discoloration, dullness, and a distinct musty odor. Internally, the fungus destroys the embryo, resulting in a significant loss of seed viability.
The development of Aspergillus penicillioides is accelerated by high temperatures and poor air circulation within storage facilities. Unlike many other fungi, it can germinate at water activity (aw) levels below 0.75, which means that grain deemed "dry" by traditional standards may still be vulnerable to colonization.
The damage caused by this fungus includes the reduction of nutritional value and the potential production of hazardous mycotoxins, which pose serious health risks to humans and livestock. Effective control strategies include:
- Maintaining strict moisture control (below critical aw thresholds).
- Ensuring adequate aeration systems in silos.
- Thorough cleaning and disinfection of storage areas between cycles.
- Regular monitoring of temperature gradients in stored bulk grain.
