Eremascus disease is a fungal infection caused by various species within the Eremascus genus, which are ascomycetous fungi. This pathogen is scientifically notable for its xerophilic nature, meaning it can thrive in environments with low water activity. Unlike many other common molds, it can cause significant damage even when moisture levels are considered sub-optimal for other fungi.

The primary hosts of this pathogen include a wide range of stored agricultural crops, specifically grains, legumes, and certain perishable fruits. It frequently attacks seeds and grains that are either improperly dried or stored in conditions that allow for localized moisture condensation, leading to substantial economic losses in the post-harvest sector.

Symptoms of the infection typically include the appearance of a thin, white or grayish mycelial mat on the surface of the affected plant material. As the infection progresses, the fungal growth can become denser, sometimes obscuring the original surface of the grain or fruit. Infected seeds often display decreased viability and can develop an unpleasant musty odor.

Development and spread of Eremascus are heavily influenced by environmental factors such as ambient temperature and inadequate aeration. Because the spores are airborne, they are easily dispersed throughout storage facilities. High-density stacking of produce without proper air circulation creates the perfect microclimate for the rapid colonization and reproduction of the fungus.

Control measures are primarily preventive. Farmers and storage managers must ensure that crops are dried to their safe moisture content thresholds before long-term storage. Furthermore, maintaining stringent hygiene protocols in warehouses, including regular cleaning of surfaces and monitoring of temperature fluctuations, is essential to mitigate the risk of an outbreak.
