Metschnikowia fructicola is a yeast species primarily known for its role in biocontrol, but it can also behave as a spoilage organism in various fruit crops. As an opportunistic pathogen, it takes advantage of compromised fruit tissues to proliferate and cause tissue degradation.
The host range includes a wide variety of sugar-rich crops, notably grapes, strawberries, stone fruits, and pomes. The fungus is most frequently observed colonizing fruit during the late stages of maturation, directly correlating with the increase in soluble solids and moisture content.
Symptoms of infection are usually characterized by localized tissue softening, exudation of juices, and an off-putting fermentation odor. In advanced stages, visible cream-colored yeast colonies may appear on the surface of the fruit, leading to rapid tissue collapse and secondary infections.
Environmental conditions that favor the development of this organism include high humidity, rainfall during the ripening phase, and moderate to high temperatures. Mechanical injuries caused by birds, insects, or environmental stress are the primary entry points that allow the yeast to penetrate the protective skin of the fruit.
