Red Monascus (Monascus ruber) is a microscopic ascomycete fungus commonly recognized as a causative agent of grain mold and food spoilage. While often researched in industrial biotechnology for its pigment-producing properties, in agricultural contexts, it acts as a significant pathogen that degrades the nutritional value and marketability of various cereal and legume crops.
The host range of Monascus ruber includes major staple crops such as corn, wheat, rice, and oilseeds. The infection process can initiate in the field under favorable humid conditions during the maturation stage. However, the most critical damage frequently occurs post-harvest, during storage, where inadequate drying and poor aeration allow the fungus to proliferate rapidly within grain silos or warehouses.
The primary symptom of infection is the development of a characteristic reddish or deep orange fuzzy mycelium on the surface of grains.
