Mucor racemosus is a soil-borne zygomycete fungus known as a primary agent of mucor rot. While it exists primarily as a saprotroph, feeding on decaying organic matter, it frequently acts as a destructive opportunistic pathogen in agricultural settings. It is notorious for attacking post-harvest produce and can thrive in diverse environments where moisture levels are sufficiently high.
This fungus affects a wide variety of crops, including potatoes, carrots, onions, tomatoes, and various cereal grains. It often acts as a secondary invader, colonizing plant tissues that have already been weakened by other pathogens, physical damage, or poor storage conditions. Vegetables that are bruised or frozen are particularly susceptible to rapid infection by this mold.
The hallmark sign of Mucor racemosus infection is the rapid development of a dense, white-to-greyish mycelial growth on the surface of the plant tissue. Over time, the fungus produces numerous sporangia, giving the growth a "fuzzy" appearance. As the fungus secretes enzymes, the tissue softens, loses its structural integrity, and breaks down into a pulpy, foul-smelling mass.
High humidity is the most critical environmental factor for the development and spread of this mold. It flourishes in conditions where air circulation is restricted, allowing moisture to accumulate on the surface of stored crops. Temperatures ranging from 15°C to 25°C are ideal for its mycelial growth and sporulation, making storage facilities without climate control major hotspots for contamination.
The economic impact of this disease is significant, as it can ruin entire batches of stored produce in a very short time. Effective control is primarily preventive: focusing on minimizing mechanical damage during harvest, ensuring thorough drying of produce before storage, and maintaining consistent ventilation in silos and warehouses. Removing any infected items promptly is crucial to prevent spores from spreading to healthy products.
