Oenococcus oeni is a species of lactic acid bacteria that is essential to the winemaking industry. While it is not a pathogen of living plant tissues in the traditional agricultural sense, it functions as a primary agent in the transformation of grape must into wine through the process known as malolactic fermentation.

The microorganism works by converting malic acid into lactic acid and carbon dioxide. This biological activity is highly valued because it reduces the harsh acidity of young wines and creates a more stable, microbiologically sound product. It effectively replaces a sharp, green taste with a smoother, creamier profile.

The primary target of this process is the wine itself. Oenococcus oeni is uniquely adapted to harsh enological conditions, such as high ethanol concentrations and low pH levels, which would inhibit the growth of most other spoilage organisms, making it a specialized inhabitant of the cellar environment.

Development and propagation rely on specific environmental factors. The bacteria thrive in temperatures between 18°C and 25°C. Excessive sulfur dioxide levels, extreme acidity, or nutritional deficiencies in the wine can hinder its activity. When these conditions are met, the bacteria proliferate rapidly to complete the fermentation process.

Management and prevention measures are vital in commercial production. Winemakers use controlled inoculation with selected strains to ensure predictable outcomes and avoid spoilage. If malolactic fermentation is not desired, techniques such as sterile filtration, thermal treatment, or careful sulfur dioxide management are employed to keep the bacterial population under strict control.
