The host range for this pathogen includes a wide variety of high-sugar commodities, most notably pome fruits, stone fruits, and table grapes. Due to its physiological nature, Pichia fermentans thrives on tissues rich in simple sugars, making orchard-grown crops particularly susceptible during the maturation and harvesting phases when the sugar concentration in the fruit reaches its peak.
Symptoms of an infection typically manifest as soft, water-soaked lesions on the skin of the fruit, accompanied by a distinct, pungent alcoholic or acidic odor indicative of fermentation.
