Saccharomycetes represent a class of yeast fungi that act as significant agents of fruit rot and tissue degradation in various agricultural crops. While often associated with fermentation, in the context of plant pathology, they function as opportunistic pathogens that exploit mechanical wounds or physiological cracks in the skin of fruits and vegetables to initiate infection.

These pathogens predominantly affect high-sugar crops such as grapes, stone fruits (peaches, plums), pome fruits, and strawberries. The disease manifests primarily during the ripening stage and the post-harvest period. Because Saccharomycetes thrive on simple sugars, they can rapidly metabolize plant tissues, leading to severe economic losses for growers.

The primary clinical symptoms include a distinct sour, alcoholic smell, rapid softening of the tissue, and the production of carbon dioxide gas bubbles within the fruit. As the infection progresses, the internal structures of the fruit disintegrate into a pulpy, liquid mass. Unlike some other fungal rots, the spread is typically associated with a wet, slimy appearance rather than extensive aerial mycelium.

Development and spread are strongly correlated with high humidity, warm ambient temperatures, and the presence of vectors like the vinegar fly (Drosophila). These insects are highly attracted to fermenting tissues, carrying yeast spores from infected fruit to healthy ones. Damage caused by hail, bird pecks, or improper harvesting techniques significantly increases the susceptibility of crops to this infection.

Management of Saccharomycetes requires an integrated approach focusing on sanitation and physical protection. Effective strategies include:

  • Rigorous removal of cull fruit and debris from the orchard floor.
  • Control of pest populations that act as vectors for fungal spores.
  • Rapid cooling of harvested produce to inhibit fermentation processes.
  • Sanitizing storage facilities and equipment to prevent cross-contamination.
  • Careful handling of produce to minimize skin punctures and bruises.
