Saccharomycodaceae is a family of yeast-like fungi recognized in agronomy as agents of specific fruit diseases that trigger fermentation and subsequent rot in plant tissues. Unlike typical filamentous pathogens, these are unicellular organisms that rapidly metabolize sugars within the juice of injured fruits, causing significant physiological and structural damage.
These organisms primarily affect fruit and berry crops, particularly those with high sugar content during the maturation stage. Crops such as grapes, apples, pears, peaches, and plums are highly susceptible. The infection typically initiates at the sites of physical injuries to the fruit skin or through punctures caused by insect pests.
Symptoms of infection include softening of the fruit tissue, the development of a distinct sour or alcoholic odor, and the release of gas bubbles at the site of the lesion. Frequently, a moist spot appears around the infection center, covered by a white or cream-colored yeast mat, which indicates the rapid proliferation of the yeast colonies.
The development of Saccharomycodaceae is strongly influenced by environmental conditions, showing high activity during warm and humid weather. A crucial factor in their spread is the presence of physical damage on fruits and the activity of vectors such as moths and wasps, which transport yeast cells from infected areas to healthy fruit tissues.
The economic impact of these fungi involves severe degradation of produce quality, loss of flavor, and inability to store harvest for long periods. To protect the orchard, it is essential to implement effective pest control programs, harvest fruits carefully to minimize mechanical stress, and maintain strict sanitation by removing fallen fruit from the orchard floor.
