In agricultural contexts, these organisms are recognized for their role in the fermentation and spoilage of sugary plant tissues, which can lead to significant economic losses in the fruit and viticulture sectors.
The disease is primarily classified as a post-harvest physiological and microbiological disorder. The pathogen utilizes simple sugars present in fruits, metabolizing them and creating an environment that alters the organoleptic properties of the produce, rendering it unsuitable for human consumption or processing.
The main crops susceptible to this yeast activity include grapes, apples, berries, and stone fruits. Any damage to the fruit's epidermis, whether caused by hail, pests, or mechanical handling, provides a direct entry point for these fungi to colonize the internal tissue and begin their metabolic activities.
Symptoms are identified by a characteristic alcoholic or sour odor emanating from the affected produce. Internally, the tissue often turns soft, mushy, or discolored. In advanced stages, surface exudates or thin, whitish yeast films may appear, often accompanied by the accumulation of fermentation gases that may cause the skin to bulge.
Environmental conditions favoring the development of this fungus are warm temperatures combined with high sugar content in tissues. Prevention strategies include rigorous crop hygiene, protecting plants from primary pests, and careful handling during harvest. Cold storage is the most effective way to inhibit the growth rate of these organisms and extend the shelf life of the crop.
