Torulopsis stellata (commonly reclassified as Candida stellata) is a yeast-like fungal pathogen that affects various fruit crops, particularly grapes. As an opportunistic microorganism, it thrives by colonizing the sugary tissues of ripening fruits, leading to spoilage and significant qualitative losses in agricultural production. It is well-documented in enology as a fungus that can impact fermentation processes if present in large quantities on harvested fruit.

The primary hosts for this pathogen include grapevines, stone fruits, and pomes. The fungus does not typically infect healthy, intact plant tissues. Instead, it relies on entry points such as micro-cracks in the fruit skin, hail damage, or wounds caused by insect feeding. Once the skin integrity is compromised, the high sugar content of the fruit provides an ideal environment for the yeast to colonize and multiply rapidly.

Symptoms of an infection include softening of the fruit tissues, internal browning, and the emission of a distinct fermentative odor. Infected berries may leak juice, and in conditions of high humidity, a creamy or white-colored yeast bloom appears on the surface of the lesions. Unlike filamentous fungi, which create extensive mycelial mats, this pathogen manifests more as a mushy rot accompanied by gas production.

Development and spread of the disease are highly dependent on environmental conditions. Warm temperatures and high humidity promote the growth of this yeast. During ripening, as sugar levels in berries increase, the fruit becomes increasingly susceptible. The economic impact is significant, as infected fruit often becomes unsuitable for harvest, and the presence of these yeasts can disrupt the desired fermentation profiles during wine production.

Effective management strategies focus on prevention and sanitation:

  • Controlling insect populations to prevent skin wounding.
  • Implementing proper canopy management to improve air circulation and reduce humidity around clusters.
  • Promptly removing and disposing of rotten fruit to prevent further spore dispersal.
  • Careful monitoring of ripening fruits for early signs of decay.
  • Applying targeted fungicidal treatments if environmental conditions favor disease outbreaks.
