Description
Zasmidium cellare, formerly known as Cladosporium cellare, is a fungus commonly referred to as cellar mold. It is frequently encountered in damp, poorly ventilated underground environments, including wine cellars and storage areas for agricultural produce, where it colonizes organic substrates such as wooden beams, pallets, and walls.
The causative agent belongs to the class of ascomycetes. While it is primarily regarded as a saprophyte, its presence in agricultural storage facilities is problematic. It acts as an indicator of poor environmental hygiene and poses a risk to the storage quality of harvested fruits and vegetables by contaminating the surrounding air and surfaces with spores.
Symptoms of the infection typically present as a dense, velvet-like coating of olive-green to black pigmentation. Once established, the colony spreads slowly over the affected surface. Beyond the visible damage to wooden structures, the fungus produces metabolic compounds that contribute to an unpleasant, musty odor that can compromise the quality of stored goods.
The development of Zasmidium cellare is heavily dependent on microclimatic conditions. High relative humidity, persistent darkness, and minimal airflow are critical factors for its growth. The fungus thrives in temperatures between 12 and 20 degrees Celsius, which are commonly maintained in traditional storage cellars and root cellars throughout the year.
Effective prevention and control measures focus on eliminating the conditions that favor the fungus:
- Maintain optimal relative humidity levels below 75% to inhibit spore germination.
- Ensure adequate ventilation through effective mechanical or passive systems.
- Apply regular sanitation protocols, including the scrubbing and treatment of wood with antifungal agents.
- Remove any decaying organic debris from the storage area to eliminate potential food sources for the fungus.
