Zygosaccharomyces is a genus of osmophilic yeasts that are notorious for their ability to thrive in high-sugar and high-solute environments. While they do not cause typical plant diseases in the field, they are significant post-harvest pathogens that degrade the quality of fruit-based agricultural products and processed foods.
These yeasts primarily impact high-sugar crops such as grapes, berries, and various pomology products. Their impact is most severe in food processing facilities where they contaminate concentrated juices, syrups, honey, and wine musts, leading to substantial economic loss for agricultural producers and processors.
The visual and sensory signs of Zygosaccharomyces activity include rapid gas production, which often causes containers to bloat or explode, as well as the development of an off-putting, yeasty, or alcohol-like odor. Liquids frequently become cloudy, and sediment may appear at the bottom of the packaging, signaling advanced spoilage.
The development and spread of these yeasts are encouraged by improper sanitation, residual moisture in storage areas, and the use of damaged or overripe fruit as raw material. Their high tolerance to common food preservatives like benzoic and sorbic acids makes them particularly difficult to manage once they have colonized a production line.
To prevent the proliferation of Zygosaccharomyces, agricultural processing operations should implement the following protocols:
- Strict sorting to remove damaged or rotten fruits before processing.
- Rigorous sanitation and disinfection of all harvesting and processing equipment.
- Effective thermal processing and pasteurization of final products.
- Monitoring of water activity (aw) and acidity levels in stored agricultural goods.
