URAL PURPLE

Shallot of the «Uralsky violet» variety is a type of onion with rhombic-shaped bulbs of medium density and a mass of up to 48-58 grams. Its dry skins have a rich red-purple hue, while the juicy ones are white with a red-purple tint. This variety is distinguished by high yield, storability, and good bulb preservation for six months. Due to its resistance to bolting and rotting, «Uralsky violet» is suitable for growing both in a biennial culture from seed onions and for producing spring onions.

The feature of this variety is its semi-sharp taste with a slight garlic note and moderate spiciness, which makes it an ideal ingredient for various culinary dishes. Bulbs of small size are convenient to use whole, for example, for pickling or caramelizing with balsamic vinegar, which is traditionally served with roasted chicken or beef steaks. Moreover, shallot greens are valued for their juiciness and aroma; they can be cut several times during the season, which expands culinary application possibilities.
