The genus Acetobacter (acetic acid bacteria) belongs to the Acetobacteraceae family and the kingdom Bacteria. In agronomy, these bacteria are recognized as opportunistic pathogens responsible for fruit decay. They are particularly dangerous in post-harvest conditions, where they accelerate the spoilage of sugar-rich crops through the oxidation of ethanol and sugars.
Acetobacter typically affects fleshy fruits such as apples, pears, grapes, and stone fruits. The bacteria are unable to penetrate intact skin; therefore, infection occurs primarily through wounds, mechanical injuries during harvesting, or punctures caused by insects. Once inside the tissue, the bacteria colonize the fruit, leading to rapid degradation.
The biology of Acetobacter involves the conversion of alcohols into acetic acid. This metabolic process acidifies the plant tissue, destroys cell walls, and causes the fruit to soften and develop a distinct vinegar-like odor. Being obligate aerobes, these bacteria thrive in environments with sufficient oxygen, making poorly ventilated storage containers highly susceptible to rapid spread.
Optimal conditions for Acetobacter development include high relative humidity (above 85%) and temperatures between +20°C and +30°C. Insect vectors, such as the fruit fly (Drosophila), play a crucial role in dissemination by carrying the bacteria from infected to healthy fruits. Additionally, contaminated tools and unsanitary storage facilities serve as major sources of primary infection.
The harmful impact of Acetobacter is centered on post-harvest losses, significantly reducing the shelf life and quality of the produce. Effective management and control strategies are essential for crop preservation:
- Strict sanitation protocols for warehouses, crates, and harvesting tools.
- Integrated Pest Management (IPM) to control insect vectors.
- Gentle handling during harvest to minimize skin damage.
