Byssochlamys rot is a serious plant disease caused by fungi of the genus Byssochlamys, most notably Byssochlamys fulva and B. nivea. These ascomycete fungi are notorious for their heat resistance, allowing them to survive standard pasteurization processes, which poses a significant threat to the fruit processing and canning industries.

The fungus affects a wide variety of crops, including apples, pears, strawberries, and tomatoes. It is primarily considered a post-harvest pathogen that leads to severe decay during storage and transportation. Its ability to thrive in low-oxygen environments makes it a persistent nuisance in sealed food containers.

Symptoms of the infection typically appear as a fluffy, white-to-yellow mycelial mat on the surface of the fruit. As the fungus secretes enzymes that break down pectin, the tissue of the fruit becomes soft, mushy, and eventually liquefies. In canned products, this often leads to a bitter taste and degradation of the fruit structure.

The development of the disease is highly dependent on humidity and ambient temperature. Because the fungus produces ascospores capable of surviving temperatures up to 90°C, it can easily survive boiling processes that would kill most other microbes. Spore dispersal occurs through air currents and contaminated harvesting equipment in the field.
