Description
Candida mycoderma, also historically referred to as Mycoderma vini, is a yeast-like fungus that primarily affects fresh produce, leading to spoilage and quality degradation. It acts as a saprophytic organism, colonizing surfaces rich in sugars and organic acids, which is commonly observed in stored fruits and vegetables.
The host range for this pathogen includes a wide variety of crops, most notably tomatoes, cucumbers, grapes, and various pome fruits. The fungus specifically targets produce that has sustained mechanical injury or skin abrasions, allowing the yeast to penetrate the internal tissues and initiate the degradation process.
Symptoms of an infection typically manifest as a thin, whitish or grayish film on the surface of the fruit. As the colony expands, it may develop a wrinkled texture. The metabolic activity of the fungus results in the fermentation of sugars and the depletion of acids, causing softening of the fruit flesh and the development of an off-putting, fermented or acidic odor.
Development and spread of Candida mycoderma are heavily dependent on environmental conditions, particularly high relative humidity and temperatures ranging from 15 to 25 degrees Celsius. The presence of surface moisture or condensation, combined with poor ventilation in storage facilities, facilitates the rapid spread of the yeast through direct contact and airborne spores.
To mitigate the impact of this fungus on post-harvest yields, growers and storage managers should implement specific preventive measures:
- Maintain rigorous sanitation protocols for all storage equipment and facilities.
- Carefully inspect produce for mechanical damage before storage.
- Regulate humidity levels to prevent condensation on fruit surfaces.
- Ensure efficient ventilation to minimize stagnant air in storage rooms.
