Kloeckera is a genus of yeast, commonly referred to as apiculate or lemon-shaped yeast. In agricultural and horticultural contexts, these microorganisms are recognized as significant spoilage agents that negatively impact the quality of fruits, berries, and the initial fermentation processes in winemaking.

The primary pathogen is Kloeckera apiculata, among other species. These yeasts are not primary plant pathogens, but they opportunistically colonize damaged fruit tissues. They feed on plant sugars, causing rapid fermentation and decay, which significantly degrades the commercial and nutritional value of the harvest.

Crops most frequently affected include grapes, apples, pears, and stone fruits. Vulnerability increases significantly as fruit matures and sugar content rises, especially if the skin has been compromised by mechanical damage, cracking, or insect attacks.

Symptoms of Kloeckera activity include a pungent, sour-sweet alcoholic odor, visible yeast growth on the fruit surface, and rapid tissue degradation. This process not only affects individual fruits but can quickly spread through a stored harvest, leading to substantial economic losses for producers.

Development is favored by warm, humid conditions and the presence of fruit surface wounds. To minimize the prevalence of these yeasts, farmers should focus on preventive strategies:

  • Stringent pest control to prevent skin punctures on developing fruits.
  • Optimizing canopy management to ensure air circulation and reduce fruit-zone humidity.
  • Handling fruit with care during harvest to prevent bruising.
  • Prioritizing rapid processing or temperature-controlled storage to inhibit yeast growth.
