Monascus is a genus of ascomycete fungi that acts as a significant post-harvest pathogen. In agronomy, it is primarily recognized for causing mold development in stored grains and seeds, which can lead to severe losses in quality and safety of agricultural commodities if storage conditions are not strictly managed.
The fungus affects a variety of economically important crops, including rice, maize, wheat, and various oilseeds. It thrives by colonizing the seed surface and penetrating the endosperm, especially when the integrity of the seed coat is compromised due to mechanical harvesting or insect damage.
Symptoms of Monascus infection include the appearance of characteristic red, orange, or purple pigments on the seeds, which are produced by the fungus during its metabolic activity. Affected grain often exhibits a dull appearance, a musty odor, and a powdery texture as the mycelium displaces the starch within the kernels.
Favorable conditions for Monascus growth include high ambient humidity (typically above 14% moisture content in the grain) and temperatures ranging between 25°C and 35°C. Poor aeration in grain silos or warehouses significantly accelerates the infection rate, allowing the fungus to spread rapidly through the grain bulk.
The harm caused by this pathogen extends beyond physical grain damage; it significantly reduces germination rates in seeds and poses health risks due to the production of secondary metabolites. In many cases, infected grain must be discarded or requires expensive detoxification processes before it can be used for animal feed or industrial processing.

- Ensuring rapid drying of harvested grains to moisture levels below 13%.
- Maintaining strict temperature and moisture monitoring within storage facilities.
- Implementing robust aeration systems to prevent moisture migration.
