Mucor circinelloides is a widespread soil-borne fungus and a significant post-harvest pathogen. It belongs to the order Mucorales and is well-known for its ability to rapidly decompose organic matter, making it a serious threat to harvested fruits and vegetables stored in warehouses or during transportation.
This fungus primarily affects a variety of produce, including tomatoes, cucumbers, peppers, strawberries, and root vegetables. It functions as a wound pathogen, meaning it typically enters the plant tissue through abrasions, cracks, or spots damaged by other pathogens, successfully colonizing and digesting the plant cells.
The characteristic symptoms of a Mucor circinelloides infection include soft, watery rot that develops very quickly. A fuzzy, white-to-gray mycelial growth often covers the infected surface, eventually turning darker as the sporangia develop. The entire fruit can disintegrate into a soft mass within a few days under favorable conditions, rendering the produce completely unmarketable.
The development and spread of this mold are highly dependent on environmental factors, specifically high relative humidity (above 85%) and moderate temperatures. The fungus produces large amounts of spores that are easily dispersed by air currents, facilitating rapid transmission between healthy and infected produce, especially in densely packed containers with poor aeration.
Effective management requires a combination of strict post-harvest protocols. Producers should prioritize careful handling during harvest to minimize wounds, thoroughly cull produce before storage, and maintain proper ventilation to lower humidity levels. Additionally, keeping storage temperatures as low as appropriate for the specific crop and ensuring clean, sanitized storage environments are essential for limiting the incidence of this disease.
