Description

Mucor hiemalis is a species of zygomycete fungus belonging to the Mucoraceae family. In agricultural settings, it is a significant opportunistic pathogen known primarily for causing mucor rot. This fungus commonly exists as a saprotroph in soil but transitions to a parasite when it encounters susceptible agricultural produce, especially in post-harvest conditions.

This pathogen poses a serious threat to a wide range of harvested crops, including root vegetables like carrots and potatoes, as well as various fruits like apples, strawberries, and tomatoes. The fungus typically initiates infection through skin abrasions, harvest wounds, or soft spots caused by other pathogens, quickly colonizing the nutrient-rich host tissue.

The primary symptom of an active infection is the development of a dense, fluffy mycelium. Initially white, the mold turns greyish as it produces a vast quantity of spores in terminal sporangia. The affected tissue undergoes rapid decomposition, losing its structural integrity and becoming macerated, often accompanied by a distinct, pungent, and sour fermentation odor.

The development of Mucor hiemalis is highly dependent on environmental factors, with high humidity and inadequate ventilation being the primary catalysts for outbreaks. Because the fungus thrives in a wide temperature range, even cool storage facilities are not completely immune if sanitation is poor or if the initial infection load on the harvested produce is high.
