The Mucoraceae family represents a group of zygomycete fungi known as the primary causal agents of post-harvest diseases often referred to as black mold or mucor rot. These fungi are essentially opportunistic pathogens that primarily thrive on weakened plant tissues, harvested fruits, and stored vegetables, quickly colonizing organic matter that lacks natural resistance or mechanical integrity.
A broad range of crops is susceptible to Mucoraceae infection. This includes various horticultural produce such as tomatoes, cucumbers, strawberries, and stone fruits, as well as essential food supplies like potato tubers and diverse grain crops. The disease is particularly problematic during storage, transport, and retail, leading to significant commercial losses.
Symptoms of the infection typically begin as a sparse white mycelium that rapidly develops into a dense, fluffy mass covering the surface of the plant tissue. As sporangia mature, the colony turns into a dark grey or blackish color. The underlying plant tissue undergoes rapid enzymatic decomposition, resulting in watery, soft rot accompanied by a pungent fermentation odor.
Favorable conditions for the rapid spread and development of these fungi include high relative humidity (above 85%) and moderate ambient temperatures ranging between 20°C and 25°C. Because the spores are airborne and extremely resilient, they can easily contaminate an entire storage facility from a single infected fruit, leading to rapid cross-contamination of healthy produce.

- Rigorous sanitation of storage facilities and logistics equipment using specialized fungicides or disinfectants.
- Maintaining optimal airflow and climate control to keep humidity levels well below the threshold for mold growth.
- Careful handling during harvest to minimize mechanical bruises, which serve as primary entry points for spores.
- Prompt removal of decaying products to prevent the buildup of fungal inoculum in the environment.
