Pichia is a genus of yeast-like ascomycetous fungi that is recognized in agronomy as a causative agent of spoilage in fruit products and certain plant infections. While many species within this genus are saprotrophs, specific members can induce active decay and fermentation processes in plant tissues, particularly when moisture levels are elevated or when the plant surface has been breached.
The pathogen consists of unicellular microorganisms belonging to the Saccharomycetaceae family. The type of disease is classified as yeast rot or fermentation rot. Unlike typical phytopathogens, Pichia usually enters plant tissues through surface injuries, cracks, or punctures made by insects, colonizing fruit surfaces during the ripening phase and subsequent storage periods.
Crops most frequently affected include pome fruits, grapes, tomatoes, and stone fruits. The fungus poses a significant threat to fruits that are near maturity, as well as produce during shipping and long-term warehouse storage, where conditions favor rapid microbial proliferation.
Symptoms of the infection include the development of soft, slightly depressed spots on the fruit surface. The affected tissue becomes watery and emits a characteristic alcoholic or sour fermentation odor. Under high humidity, a white or creamy, slimy layer consisting of yeast biomass may appear on the lesions, which spreads rapidly to adjacent fruits.
Optimal conditions for Pichia development include high relative humidity (above 85%) and temperatures ranging between 20°C and 30°C. The spread of infection is facilitated by insect pests that damage fruit skin and by poor hygiene practices during harvest. Failure to maintain proper temperature control in storage facilities often triggers large-scale outbreaks.
The economic impact of Pichia involves total loss of marketability, degradation of flavor profiles, and the inability to process the harvested produce. In warehouse settings, a single infected item can serve as an inoculum source for an entire batch, leading to substantial losses for agricultural operations.
