These pathogens represent the most significant threat to harvest quality and volume. The most notorious agents include Botrytis cinerea (gray mold), Erysiphe necator (powdery mildew), and Plasmopara viticola (downy mildew), which specifically target the developing berries.

These pathogens vary in taxonomy; for instance, Botrytis cinerea belongs to the Ascomycota phylum, while downy mildew belongs to the Peronosporaceae family. Despite their systematic differences, they share a common strategy: colonizing the internal tissues of the berry to obtain nutrients, which effectively destroys the fruit as it reaches maturity.

The life cycle of these pathogens is closely synchronized with the phenological stages of the vine. Many infections are initiated during the flowering period, remaining dormant until the sugar content of the berry increases. Once the berries soften and the acidity drops, the pathogen breaks dormancy, leading to rapid expansion of fungal colonies throughout the bunch.

Environmental conditions, particularly high humidity and temperatures between 20°C and 25°C, are optimal for disease development. Dense canopy structure, which reduces airflow and increases local humidity, significantly promotes the spread of pathogens. Furthermore, any mechanical injury or insect-induced wounding provides entry points that accelerate infection rates.

The economic impact of these pathogens is profound, leading to both quantitative yield reduction and qualitative degradation of the grapes.
