The Sauvignon Taman variety is a technical white grape variety belonging to the Western European ecological and geographical group. The bushes of this variety are characterized by strong growth vigor and a spreading shape. The leaves are medium in size, rounded with wavy edges, light green in color with a yellowish tint and almost glabrous surface. The flowers are bisexual, which promotes good pollination and fruit formation. Bunches of medium size, cylindrical-conical in shape, moderately dense, with a long herbaceous leg. Berries greenish with a golden hue, moderately tight skin, juicy with a harmonious taste and weak grassy aftertaste.

Sauvignon Taman is characterized by good frost resistance and relative resistance to mildew, however, it is susceptible to oidium and gray mold, especially in rainy seasons. The variety tolerates the close occurrence of groundwater well and prefers light sandy soils on which it achieves the best yield indicators. Bush formation is recommended fan-shaped, multi-armed, with an optimal load of 35-40 buds and 23-24 shoots. To improve the quality of the crop, pinching the tops of green shoots before flowering and systematic application of organic and mineral fertilizers are used.

The variety's yield is about 10.4-13.3 tons per hectare, with an average bunch weight of about 152 grams. The must yield reaches 74.5-75.4%, with sugar content in the berries 17.5-19.6 g/100 ml, which makes this grape suitable for the production of high-quality juices, table and sparkling wines. Sauvignon Taman is valued for its harmonious taste and aroma, as well as for its versatility in use both fresh and in winemaking.
