Biochemical Profile and Application
A key indicator for Carlena is its high starch content (18–19%). This makes the variety an ideal raw material for the production of potato chips and french fries. The stability of dry matter in tubers weighing 50–130 grams ensures a predictable yield of the finished product and minimal fat absorption during frying. The light yellow flesh maintains its texture after dehydration, making it suitable for dried potato flakes as well.
Agrotechnical Resistance
The variety's defense system is embedded at a genetic level. The breeders focused on resistance to the most aggressive soil pathogens:
- Late Blight: high field tolerance allows for a reduction in fungicide applications.
