Yellow Aspergillus (Aspergillus ochraceus) is a filamentous fungus belonging to the kingdom Fungi and the genus Aspergillus. It is primarily known in agriculture as a significant post-harvest pathogen that infects a wide array of stored crops, including cereals, coffee beans, nuts, and dried fruits, causing substantial economic losses through product degradation.
The primary pathogenicity of this fungus lies in its ability to produce secondary metabolites, most notably ochratoxin A. This potent mycotoxin is a serious human and animal health hazard, known for its nephrotoxic, hepatotoxic, and carcinogenic properties. Because it is highly heat-stable, ochratoxin A persists through most processing and cooking methods, making prevention of fungal growth in raw materials the only effective control strategy.
The biological cycle of Aspergillus ochraceus is characterized by the rapid production of conidia, which give the fungal colonies their distinctive ochre-yellow appearance. The pathogen is widespread in soil and can easily contaminate harvested crops during collection, threshing, or transportation. It thrives in environments where organic matter is available and environmental conditions support fungal metabolic activity.
Development and spread are heavily dictated by abiotic conditions, specifically moisture and temperature. The fungus requires a relative humidity above 70-80% and moisture content in grain exceeding 14-15% to initiate colonization. Optimal growth occurs between 20°C and 30°C. In poorly ventilated silos or storage bins, the fungus can rapidly colonize large volumes of agricultural products, leading to heating, caking, and total loss of commercial value.
Managing and controlling Aspergillus ochraceus requires a proactive approach centered on preventing ideal growth conditions:
- Drying all agricultural produce to safe moisture levels (typically below 13%) before long-term storage.
- Maintaining proper aeration and temperature control to prevent moisture migration and localized heating within silos.
- Implementing rigorous sanitation protocols for storage facilities and transportation equipment to eliminate residual fungal spores.
- Performing routine diagnostic testing for mycotoxin levels in harvested lots intended for human or animal consumption.
