Description

Saccharomyces cerevisiae, commonly known as baker's yeast, belongs to the kingdom Fungi, phylum Ascomycota. While essential in biotechnology and food industries, in the context of plant pathology, it acts as a secondary pathogen capable of causing significant spoilage in harvested produce. It is a unicellular eukaryotic organism that thrives as a facultative anaerobe.

The primary damage caused by Saccharomyces cerevisiae involves the fermentation and softening of fruits and vegetables. Targeted crops often include sugar-rich items such as grapes, strawberries, peaches, and pomes. When the skin of the fruit is breached by physical trauma or pest activity, the yeast colonizes the internal tissues, leading to rapid decay characterized by alcoholic odors and structural tissue collapse.

The biological cycle is dominated by asexual reproduction via budding. Under nutrient-rich conditions, the growth rate is exponential, quickly overwhelming the tissue. When nutrients are depleted, the yeast enters a sporulation phase, producing ascospores. These spores are highly resilient, allowing the pathogen to persist on soil surfaces, garden debris, and even within the pores of agricultural tools for extended periods.

Development and spread are favored by moderate temperatures (20–30°C) and high humidity levels. The infection is disseminated through physical contact, splash dispersal, and insect vectors, particularly vinegar flies (Drosophila spp.), which are attracted to the volatile compounds produced during the initial stages of fermentation. Once introduced into a storage facility, the yeast can contaminate entire batches through shared equipment.

Control of Saccharomyces cerevisiae in agricultural settings focuses on prevention rather than chemical eradication. Key strategies include:

  • Integrated Pest Management (IPM) to minimize fruit surface damage.
  • Sanitation protocols for harvesting containers and storage rooms.
  • Rapid post-harvest cooling to inhibit yeast metabolic processes.
  • Prompt removal of decaying or damaged fruit from fields to reduce inoculum buildup.
