"Polissky Dzherelo" is a mid-late maturing potato variety (115–125 days) developed by the Institute of Potato Research of the NAAS of Ukraine. The tuber profile features a distinctive pink skin protecting a creamy-colored flesh. With a starch content of 16–17% and a sensory rating of 4.5 points, this variety offers an excellent culinary balance, suitable for a variety of gastronomic applications. Technologically, the tubers demonstrate strong storability, maintaining texture and flavor integrity throughout the long-term storage phase.
