Description
The culture is characterized by high yield: when planted per square meter, up to 5 kg of leafy greens can be obtained. Sorrel is rich in vitamins (especially vitamin C), proteins, carbohydrates, fiber, and organic acids, making it a valuable ingredient in the diet.
Freshly harvested leaves are used to prepare first courses, pie fillings, salads, and omelets. Jellies are also made from them, and if necessary, they are salted, canned, dried, or frozen for the winter. After cutting, young shoots quickly regrow, allowing for multiple harvests throughout the season.
Sowing sorrel is done in spring (April–May), but winter sowing is possible for early production. This approach ensures a steady flow of fresh greens even during cool periods of the year.
